This comforting and delicious lentils soup is so easy to make at home. Perfect for the winter cold days as well as makes a tasty dinner or lunch on any day of the week. Its a soup I enjoy making all seasons. INGREDIENTS 3 cups Lentils, picked through and then rinsed 2 Tbs Olive oil 1 Yellow onion, peeled and diced small 1 Tbs Garlic, chopped 1 Tbs Ginger, minced 1 Tsp Tomato paste 2 Tsp Coriander 1 Tsp Cumin 1 Tsp Garam masala 1 Tsp Turmeric 1 Tsp Smoked paprika 1/4 Tsp Red pepper flakes 1/2 Tsp Freshly ground black pepper 2 Medium ripe tomatoes, diced small 1/4 cup Cilantro, mostly stems 4 Cups water 1 Can Coconut milk 1 Tbs Lemon juice More water as needed Salt to taste, Note: Add after lentils have slightly softened For the Vegetables Garnish 1/2 Red bell pepper, diced small 1/2 Yellow bell pepper, diced small 1/2 Orange bell pepper, diced small 1 Medium carrot , peeled and diced small 1 Medium zucchini, washed and diced medium Salt and pepper to taste Olive oil, to coat Roast in 425F oven for 10 - 15 minutes or until roasted.
