Today am sharing this easy and tasty brown rice and chickpeas pilau recipe A hearty and delicious side dish or vegetarian dish, perfect for any day of the week. INGREDIENTS 2 cups brown long grain rice, washed and soaked 1 Small can Chickpeas / Garbanzos, drained and strained 2 Tbs Vegetable oil 1 Tsp Whole Garam masala spices 1 White onion, peeled and diced 1 Tbs garlic, chopped 1 Tbs ginger, minced 1 Tsp Cumin 1 Tbs Coriander 1 Tsp Garam masala spice 1 Tsp Chili powder 1 Tsp Paprika 1 Tsp Turmeric 3 cups water or vegetable stock Cilantro chopped, roots and stems to cook and tops to garnish 1 Scallion, chopped ( optional) 1 cup carrots, peeled and diced 1 cup Bell peppers, mixed colors , diced 2 Ripe plum/ roma tomatoes, diced
