Heat olive oil and butter in a pan over medium-high heat. Sear the salmon until golden on both sides, then set aside. In the same pan, add the cherry tomatoes and cook until soft and blistered. Add the onion and garlic, cooking until fragrant. Pour in the fresh cream, then stir in the dill, paprika, salt, pepper, and chilli flakes. Add the parmesan and cream cheese, stirring until the sauce is smooth and creamy. Toss in the baby spinach and let it wilt into the sauce. Return the salmon to the pan and let everything simmer together for a few minutes.
