That comforting aroma wafting through the house makes cooking these breakfast potatoes such a joy, especially on those late weekend mornings. Enjoy them with a side of scrambled or fried eggs or an omelette, a steaming cup of African tea or coffee and a glass of fresh juice. The perfect breakfast potatoes should be deliciously tender on the inside and delicately crispy and golden brown on the outside. To achieve this, I start by steaming the potatoes for about 10 minutes. I then let them cool down and store them in the refrigeration for dicing and cooking the next day. When cooking these, it’s best to use a skillet that is large enough to give the potatoes room to move around and crisp up nicely. I hope you do give this a try sometime.
