Hello dear people, Cooking with tomatoes is a time honored practice in African cuisine and today I am sharing an easy homemade tomato sauce recipe using the simplest ingredients which I had on hand; fresh tomatoes, onions, garlic, aubergines, tomato paste, marjoram and bay leaves. I used balsamic vinegar as a preservative and didn’t add any salt because I’ll do that when I am cooking my main dish. Making your own tomato sauce at home is a worthwhile labor of love and will ensure that you don’t compromise on the quality of the stews, curries, casseroles as well as the pasta and pizza sauces you cook for your loved ones. The most time consuming part of this process is prepping the tomatoes. They must be peeled and chopped before or after cooking. When ready to store, allow the cooked tomato sauce to cool completely before transferring to appropriate freezer containers or reseal able freezer bags. The sauce can be frozen for up to four months.
