INGREDIENTS 1.5 LB ( 681g ) chicken thighs, boneless and skinless, diced 1 Tsp Vegetable oil + extra if needed (for mushrooms) Salt and Pepper to taste 10 -15 Cremini ( Button ) mushrooms, wiped clean and sliced thin. 1 Shallot, peeled and minced 2 Garlic cloves, peeled and chopped 1/4 Tsp Italian seasoning, dry 1/2 c Heavy cream 1/4 c Grated Parmesan cheese 1 Tbs Butter Parsley , chopped to garnish More Cheese to finish
