Eggplants are simply amazing once you understand that they absorb the flavours of the sauce in which you are cooking them. The more flavourful the sauce the more tasty your eggplants will be. In this video I show you a recipe to create a delicious and flavorful stew. The depth of flavour comes from using the lake Victoria sardine aka silver fish, mukene, ngezea, omena, dagaa. I also used coconut milk for a creamy stew and to help mask the strong smell of the silver fish. It is an optional ingredient. Like all the recipes I share on this channel, this stew is easy to make, healthy and nutritious. It’s packed with antioxidants, protein, omega 3 fatty acids and protein from the eggplants and silver fish. You may serve the stew with anything from posho, sweet potatoes, steamed rice, matooke to inyasa (kalo, fufu, swallow) and whatever side tickles your taste buds. INGREDIENTS (Serves 4) 200g Silver fish 3 tbsp Cooking oil 4 cups Chopped eggplants 1 large Onion, sliced 2 cloves Garlic, minced 2 cups Homemade tomato sauce 1 – 2 tbsp Curry paste 1 cup Coconut milk 1 bundle Coriander, chopped Salt to taste Enj😄y.
