This Quinoa fried rice with mushrooms and lots of vegetables is so good and comes together just so easily. This is a recipe that you can do on any day of the week and will utilize any vegetables in your pantry or readily available in your local markets supermarkets. INGREDIENTS 1 cup Quinoa , washed and drained 1/2 cup Rice, washed until water runs clear, drained For the Sauce 1Tbs soy sauce 1 Tbs Worcestershire sauce 1/2 Tbs rice wine vinegar 1 Tsp sesame oil 1 Tsp honey or brown sugar For the Mushrooms and Vegetables 1 Tbs cooking oil ( I used avocado ) 1 Medium red onion, peeled and diced 1 Medium carrot, peeled , cut into thin half moons 1 Pkt { 8oz } Mushrooms blend or any will do 1 Tbs Garlic Ginger paste 2 Celery ribs, washed and chopped 1/2 Red bell pepper, washed and diced 1/2 Green bell pepper, washed and diced Salt and pepper to taste 3 Scallions , chopped whites and greens separated
