Stuffed peppers are delicious and easy so easy to make at home. This simple recipe uses some basic pantry ingredients to create a mouth watering dish that you can also make a head and finish when needed, Perfect for weeknight dinners on any day the week, it also will work well as a centre piece for entertaining. INGREDIENTS 6 Bell peppers ( preferably tri colors, yellow, red and orange ) cut in half long wise. 3 lb. Beef chuck , ground 1 Large onion, peeled and diced 1 Tbs Garlic, chopped 1 Tbs Ginger, minced ! Carrot, peeled and diced small 1/2 Cup bell peppers diced ( any color or combination ) 2 Scallions, chopped and greens reserved for garnishing 1/4 Cup Cilantro, chopped 1/2 Cup tomatoes diced ( or from a can ) 1/4 Cup Tomato sauce ( canned ) 1/2 Tsp Red pepper flakes 1 Tsp Italian seasoning 1/2 Tsp Cumin 1 Tsp Coriander
