INGREDIENTS for Smokey Jollof Rice 4 cup Rice 120g Tomato Paste (1 satchet & half) 1/2 Cup blended tomato/Pepper mix But if you are Blending from the scratch, use 👇 5-6 Medium Size Tomatoes 3-4 Cayenne Pepper (Shombo) 2-3 Scotch Bonnet Pepper 1 Medium size Onions *Remaining Ingredients 1 cup Chicken or Beef Stock 1 Medium size Onions 150 ML vegetable Oil 4 Tablespoon Cooking Butter 2 Tbspn Curry powder 2 Tbspn Thyme 1 Tspn Ginger powder ( Optional) 2-3 Bay leaf 2 seasoning Cubes 1.5 Tbspn Salt or to taste 2-3 Fresh Tomatoes ( Garnishing) I small size Onions Additional Tips you Should know🥰 🔶 use Leftover Oil: Party caterers don't start with fresh vegetable oil.. They use the leftover Oil that's remaining from frying meat & stuffs. It adds some flavour & aroma to the dish 🔶Meat/Chicken Stock: listen, you can't cook better Jollof with ordinary water oo.. You need quality Stock left from boiling the meat/chicken. 🔶Use Cooking Butter: Not blue band oo😂 Simas, kings, whatever kind of cooking butter you can get... It's for shine & Aroma too 😍 🔶 Drop some Bayleaves: I wish it was optional🤦♀️ but honestly You'll need it to heighten the Aroma too.. Don't forget to put enough curry & thyme too . 🔶 Then Let it Burrrrrrnnnn😂😂 My dear, if you want that smokey flavor, you have to be willing to spare a few grain to the gods of Fire 🔥.. This is the reason why its best to avoid non stick pots and use others like stainless @ Aluminum pots... 🔶 Finally, remember that the rice doesn't need plenty water to cook.. Just heat... That's why we are using Foil paper to trap & retain the steam for cooking. . Also, use a wooden spoon too to stir... don't ask me why..
